700-800 g cod fillet.
1 head of lettuce.
1/2 cucumber, sliced. 1/2 red pepper, sliced.
A few fresh rocket
A few fresh herbs, e.g. chives, basil or chervil.
4 tbsp coarsely chopped peanuts
squeezed juice of 1 lime
1 tsp mustard
3/4 dl olive oil
1/3 dl sambal oelek
Pre-heat the oven to 180°C. Mix together all the dressing ingredients. Cut the cod into small pieces, and brush each with a little of the marinade. Place the fish in a greased ovenproof dish, and bake for approx. 15 minutes. It should have an inner temperature of 60°C. Place the lettuce, cucumber and pepper onto 4 serving plates. Drizzle over a little dressing, place the fish on top of the salad and add the rest of the dressing. Garnish with chopped peanuts and fresh herbs.
